My family and friends often ask me for health and wellness advice, so I started this blog to capture my musings about the topic. I’ve been on my health and wellness journey since 2010 when I graduated college and was struggling to obtain mental peace over my lifestyle and food choices. I stumbled upon a whole food plant based diet and never looked back. Happiness, energy, and a right-size body soon followed. I hope to show you that a diet consisting of mostly fruit and veggies can be delicious, easy and sustainable. Even while traveling the world!
To start things off, I wanted to share an easy, sweet recipe. I’ve made this for family and friends and have always gotten rave reviews. Banana “nice cream” is one of my go-to breakfasts and desserts. It’s made from three ingredients and is super adaptable and quick to whip up!
The main ingredient is frozen bananas. Make sure to peel your bananas before freezing them overnight. When ready, let the frozen bananas sit at room temperature for 10 minutes before cutting them into one inch pieces. This makes the blending A LOT easier, especially if you are not using a high speed blender.
Put the bananas, dates and vanilla extract into a high-speed blender.
Add a tablespoon of water at a time until you reach ice cream consistency. I normally don’t use any water because I like nice cream to be thick.
Top with whatever fruit, seed or granola you’d like. I used bananas, blueberries, hemp seeds and Go Raw buckwheat granola. ENJOY!
Vanilla Nice CreamPrint Recipe
- 2 frozen bananas
- 3 pitted dates
- Dash of vanilla extract
Let frozen bananas sit at room temperature for 10 minutes.
Throw all ingredients into a high speed blender and blend until smooth.
Top with anything you would like! I used banana, blue berries, hemp seeds, and Go Raw buckwheat granola.
